Everything’s Coming Up Pumpkin!

Fall is my favorite time of year.  If the weather was like this the whole year I would not complain.  With Fall comes pumpkins.  I’m usually much more of a sweet potato person, but my son requested I make pumpkin bread.

I decided to try this pumpkin spice bread recipe from Fat Free Vegan Kitchen. I used applesauce in place of the oil and instead of using an egg or Ener-G Egg Replacer, I used a banana. The pumpkin bread turned out great.  So, after I made the bread I had a lot of pumpkin puree left over.  I decided to put it in pancake batter.  Big hit with my son.  Then I decided to add it to my protein smoothie.  So good!  I had a pumpkin protein smoothie 3 days in a row.  Totally addicted.

Two more favorite recipes are the pumpkin protein bars  from Courtney’s Sweets. Which were very easy and delicious.   I made them without the frosting.   I used CVS protein Powder.  My favorite protein powder at the moment.  Finally my week of pumpkin heaven ended with making a pumpkin pie. I’m a sweet potato pie girl, but my son insisted on pumpkin. This pumpkin pie recipe from Vegan Spoonful doesn’t require a lot of ingredients. With all of the recipes I used my favorite pumpkin spice from Spice Islands.

Pumpkin Pie

Turns out, pumpkin is not only delicious it’s nutritious too.  Pumpkin is a superfood. It’s loaded with vitamins and fiber.  Not only is it good for the inside of your body, but it’s also fantastic for the outside. I remember for several months before my wedding in 2001 my esthetician would give me a pumpkin facial once a month. My skin looked flawless for the big day. Here’s a recipe for a DIY pumpkin facial.

My Pumpkin Pie Smoothie

My Pumpkin Protein Smoothie!
2 tbs of pumpkin puree
1 scoop of protein powder (vanilla)
1 cup of almond milk (vanilla)
1 tsp of pumpkin spice (my favorite is from Spice Islands)
3-4 ice cubes

Just mix it all together in a blender and voila! Delish!
